Albert Gruetzmacher originally established the Luxemburg facility as a small cheddar cheese and butter making business in 1892. Charles Krohn purchased the business in 1907 from Mrs. Gruetzmacher following Albert's death. Business has flourished under the direction of the Krohn family including several plant expansions, plant updates and changes to the product line. Currently 99% of the cheese made at the Luxemburg facility is mozzarella and provolone, which is distributed on the east coast and in several Midwestern states. A factory cheese store is also open for retail customers which features a variety of cheeses along with other gift related items.
Innovative product development has been the hallmark of our three Trega cheesemaking families throughout the past century. The latest innovation is the addition of a state-of-the-art whey facility at our Luxemburg location. With the growing use of whey-based derivatives in foods and beverages, fractionating fresh sweet whey has become a significant operation for Trega Foods. We have developed a proprietary cold microfiltration process for the production of Iso Chill. Cold filtered whey protein isolate (WPI) is manufactured entirely in the United States and is the purest form of whey protein available. This unique process, conducted in our modern, high-tech plant, creates a superior quality product with many advantages over other isolates. Our facility currently produces Iso Chill 9000 & 9010, Iso Chill 8000 & 8010, Iso Chill 6000, Lactose, Reduced Lactose Whey and Deproteinized Whey.

Our Little Chute facility was started in 1940 by Art Simon, father of Dave Simon. Art was a bookkeeper for a small cheese factory owned by a family by the name of Beerstakers. The Beerstakers operated their cheese factory on the corner of what is now Evergreen Drive and Highway N. Because of financial difficulties, the Beerstakers were looking for a buyer. Art Simon decided to buy the cheese factory and start a new venture. He already operated a farm down the road, took care of the greens at North Shore Golf Course in Appleton and certainly was no stranger to hard work. He began his third job as owner and operator of Pleasant View Cheese Factory Inc. When Art began his venture, he had no knowledge of cheese making and had to employ a licensed cheesemaker as a teacher. His philosophy was to work hard, take pride in everything you do, be fair and honest to those you deal with and then you will succeed.
Currently, the Little Chute facility produces a variety of cheeses but the majority of production consists of mozzarella sticks. Simon's Specialty Cheese Store is next door to our Little Chute location and features a wide selection of cheeses as well as other gift related items.

Our Weyauwega facility, currently in its third generation proudly possesses a heritage passed down from the late Jacob H. Wagner. He operated many small cheese plants while raising five sons. In 1961, the five, second generation members pooled their resources and milk supplies to form one large plant in Weyauwega. This was done in order to handle cheese, whey and Grade A milk more efficiently. The Weyauwega facility has evolved to its present modern operations through management who have been sensitive to the need for quality products and flexible in the face of changing technology. Working hand-in-hand with Kraft Foods, the Weyauwega facility pioneered the development of the "640 Square Barrel" used to hold and store natural cheese for cutting. One of our specialties in the cheese industry is the production of a fine aged cheese that is cheddared in the traditional manner. Special ingredients and equipment are vital to the production process as we aspire to produce the finest product for our customers.
Although sharp cheddar cheese is our signature cheese, in 1986 the Weyauwega facility started a feta cheese operation to compete in the specialty cheese market. One of our cheesemakers has already garnered awards for our feta cheese, sold primarily in retail stores. We have also benefited from the early involvement in the handling and marketing of whey. Currently, we work with Ross Laboratories; they use our lactose whey powder in their production of infant formulas. Reduced Lactose whey powder is sold for use in certain animal feeds.
