Trega Foods lactose, also known as "milk sugar," is a white to pale yellow colored product, possessing a mildly sweet taste. Lactose is isolated from whey, which is available after the production of cheese. The basic principle of lactose production is the removal of water from whey by evaporation to increase the concentration of lactose. Then we gradually cool the condensed whey to allow crystallization and separation of lactose. Typical applications include infant foods, chemicals/pharmaceuticals, dairy, prepared dry mixes, bakery products and soft drinks/special dietary foods. Trega Foods Deproteinized Whey (DPW) is a free flowing, nonhygroscopic, completely soluble product that is light cream in color. We manufacture this product by removing a portion of the protein from sweet dairy whey through Ultrafiltration processing to produce a finished dry product with greater than 80% lactose . Typical applications for DPW are bakery products, dry mixes, snack foods, confections and animal feeds. DPW can also offer an economical replacement for whey and lactose.
